In a shared press release with Hilton, Maria Valeria Nowotny said, “The reimagining of Waldorf Astoria Los Cabos Pedregal has been done thoughtfully in order to ensure a uniquely authentic luxury experience which gives a nod both to the resort’s impressive heritage as well as to the heritage and tradition of Mexican culture.” Travel + Leisure.
The transformation will take place over a period of time, starting in 2022. This includes improvements to the culinary program and restaurants. Since then, the hotel has added Agave Study at Peacock Alley, celebrating Mexico’s agave spirit-making traditions, Neutral Coffee Lab, offering local and international coffee varieties, and Travesía, a nine-course taco tasting experience. Don Manuel’s restaurant, the resort’s signature, has also been redesigned and serves a new take on Mexican cuisine, using fresh ingredients from local suppliers.
