    Inside Alila Ventana Big Sur, California’s Renovation

    A half-century after it opened as one of Big Sur’s finest getaways in California, Alila Ventana Big Sur Celebrates its 50th Anniversary with renovated guestrooms and new dining offers.

    The 160 acre property has drawn visitors to California’s dramatic Central Coast for years. This region is known for its panoramic views of the Pacific Ocean, and a bounty of activities in secluded redwood groves or beaches. Today, the resort—a frequent World’s Best Awards winner—is part of Hyatt’s Alila brand and still underscores the region’s reputation as a destination for laid-back luxury.

    Matt Skaletsky is the general manager of the resort. He says: Travel + Leisure. “We are committed to preserving our heritage while evolving the concept of conscious hospitality. Big Sur is not about disconnecting yourself from the world. It’s all about reconnecting to yourself and nature. Our role is to simply make those moments as powerful as they can possibly be.

    The resort’s 54 rooms have been transformed with locally made furnishings, sustainable materials and a color palette that reflects its surroundings. The organic textures, spa-like bathroom, and private terraces, some with outdoor showers, create contemporary spaces that stay true to the hotel’s roots.

    The guest rooms will be transformed, but visitors can also look forward to a newly designed dining program that combines Mediterranean influences with California seasonal and local ingredients. This includes produce from an organic garden located on the property.

    Andrew Lauer’s new menu at the Sur House restaurant pays homage to Monterey Bay with dishes like bone-in-ribeye served with shishito and duck fat potatoes. He also offers house-made squid ink spaghetti. New brunch menus feature Mediterranean dishes that can be shared, from Moroccan shakshuka and heirloom waffles with sumac strawberry topping to housemade squid ink pasta.

    Alila Ventana Big Sur is also working with Sony, who will provide professional cameras to capture Big Sur’s filmic landscapes. Skaletsky believes that the hotel’s next 50 years will be marked by a bolder approach in hospitality.

    “For us, this means pushing boundaries, making experiences that inspire awe and most importantly having a positive impact in the world we call our home,” he said.
