While volunteering in the community, the family explored the Mexican coastal towns in the states Colima and Jalisco. They spent time on the beaches of these cities and even bought a home there. “We spent a lot of time in Mexico—love it there!” He said.

Hunter, Fieri’s son of 28 years, brought back a cup full of mixed fruits from a trip he made nearly two decades earlier. Fieri loved it. “He’s had pineapple, mango, watermelon – and you can definitely taste the difference,” said the food expert.
Hunter then revealed that the main ingredient was Tajin, which is a Mexican spice powder made with chili peppers lime and sea salt.
“I was like, ‘What are you doing? “Don’t add salty seasoning to that.” He remembered of his shock, “I take a bite and am like, ‘Whoa! You’ve got me laughing! It’s accentuated!”
Tajin was compared to salting a plain cream sauce. He explained that “a sprinkle of the seasoned spice mixture over the fruit takes it to the next step.”
Spiced Mango Sorbet is a flavor based on that fruity sensation.

It was more about finding a unique tart flavor than a specific location for the last flavor of the Waterloo Line. Fieri said that when you travel to a region with huckleberry you will find them everywhere. But if you move to the rest of the nation, it is not as common.

He believes he first saw the berry when he visited West Virginia where his father is from. It reminds him of the Appalachian region, West Virginia, Pennsylvania, Ohio and other places. He also said he found them in Amish Country where they are the most abundant. “It’s one of those things that when it’s available, you find it everywhere—huckleberry jam in huckleberry restaurants that have it on their huckleberry pies.”
With that idea, he started thinking about the best way to enjoy the tart berry, and came up with the Huckleberry Cobbler flavor. “Waterloo has a big imagination. They were able take it and figure out how to make it,” said the host.
Fieri’s favorite flavor is the Spiced mango sorbet, because it reminds him of the way he taught his family to spice this tropical fruit.
The 51st season is now underway. Diners, Drive-Ins, and Dives airing now—and its season finale scheduled for May 23—Fieri is still searching for the best eats around the U.S. When he is back in Santa Rosa in NorCal, Fieri says that his favorite place to dine is “my home!”
Although he doesn’t go out to eat often, he has a favorite restaurant. Tomi Thai Windsor is nearby. “That’s exactly what I had the night before,” he told us during our interview on April 10. It is run by an amazing family and they are as busy as possible. “We couldn’t get them on Triple D!”
