Cornichon, the house martini that is made from dill pickle gin and London Dry gin with Cocchi Extra Dry vermouth and their own dill oils, must be mentioned. One of the longest-running cocktails—and a fan favorite on tap—is the Nitro Colada, with clarified pineapple juice, coconut-oil–washed rum, housemade falernum, and coconut water. This is just a small sample of the possibilities. The cocktails, which are based on French technique, are playful, precise and inventive.
