With a deep passion for culinary excellence, Chef Arnaud draws on his extensive experience in Michelin-starred kitchens to deliver exemplary dining experiences across the resort’s Firefly Pool & Restaurant, 360° Bar and signature ALTO Restaurant.

    Chef Arnaud, a Michelin-trained chef with more than 35 years’ experience in the culinary arts, presents constantly evolving seasonal menus which reflect his passion and highlight the best locally sourced ingredients. From organic Phuket-grown heirloom tomatoes; and sustainably sourced ‘Thai wagyu’ beef from Nornuea Farm in Thailand’s Pathum Thani province—renowned for its premium crossbred Japanese-Thai cattle; to the striking seven-coloured Phuket lobster, freshly caught in the island’s waters, Chef Arnaud is shining a light on local produce and culinary creativity.

    With experience spanning Europe – including at France’s three Michelin star Le Coq HardyOne Michelin star for a restaurant in the vicinity of Paris Hotel Barrière Le Majestic, Cannes – the United States and Australia, Chef Arnaud brings his refined, cosmopolitan culinary expertise to Thailand, delivering an elevated dining experience that infuses global influences with South Asian inspiration.

    The Pavilions Phuket’s signature Italian restaurant, ALTO, invites guests to enjoy a dining experience with stunning views of the Andaman sea and the lush island landscape.     The resort’s Firefly Pool & Restaurant offers an all-day-dining venue with an open kitchen concept showcasing contemporary wood fired grill specialties with a Mediterranean touch; and 360° Bar invites guests to savour signature mixology and eclectic tapas while absorbing themselves in panoramic views.
