Accor, the largest hotel operator in the Pacific, is proud to announce the return of one of Australia’s most recognised boutique hotel brands to the Hunter Valley, with the rebrand of Grand Mercure The Vintage to Peppers Hunter Valley following a multi-million dollar refurbishment of the property.

In a milestone moment for the brand, Peppers returns to the very place where its story began – the picturesque wine country of the Hunter Valley. Peppers has been synonymous with luxury, service and immersive experiences in beautiful destinations. Now, the brand is embarking on a new chapter, in one of Australia’s most iconic regions.

The newly reimagined Stevens Group & Accor Vacation Club hotel, as well as additional owners, features a collection one, two and three bedroom villas that have been beautifully updated to reflect a modern wine country aesthetic. All apartments were completely redesigned, from the ceiling to the floor. They now feature modernised kitchens and furnishings, as well as refined textures. The result is a series immersive spaces inspired by the Hunter Valley, which balances natural tones with elevated design.

The newly redesigned reception area combines the sophistication of the brand with the relaxed spirit of the region.

Located within the renowned ‘The Vintage’ precinct, Peppers Hunter Valley is surrounded by rolling vineyards, sweeping countryside, and the championship 18-hole Greg Norman-designed golf course.

The team behind the precinct has been working on a further transformation of the precinct. NINETEEN set to launch a new Mediterranean-inspired restaurant and bar, Mezze, upstairs. This new addition further enhances the growing reputation of the area as a destination that offers world-class wine, food and relaxation.

The revival of this iconic property reinforces Peppers’ positioning as a brand that creates memorable stays – combining thoughtful design, exceptional service, and distinctive locations across Australia, New Zealand, and beyond.

Adrian Williams, Chief operating officer of Accor Pacific, said: “The return of Peppers in the Hunter Valley is an important and proud moment for us. This is where the Peppers story began, and to see the brand come full circle – now elevated, refreshed, and reconnected to its roots – is incredibly special. This property’s transformation reflects our strong partnerships and the demand for premium getaways that combine charm and sophistication. Peppers Hunter Valley is not just a beautiful place to stay – it is a return to what makes travel personal, local, and unforgettable.”
